Restaurant Kokkeriet

Based on French craft and novel techniques, Kokkeriet prepares Danish food in a new interpretation.

Special thanks for Johan and Iki who provided me with great pictures:)

The Kitchen... located in a charming place in the heart of Copenhagen...

master at work... giving distinct and personal touch...

We went for a 6-course menu paired with wine.

Appetizer selection 1 - tuna mousse

...

Appetizer selection 2 - smoked salmon...

Danish butter with hazelnuts...

Lemon Mousse - burned scallops, fennel & tarragon paired with...

2009 Rias Baixas, Santiago Ruis

Absolutely amazing: Cauliflower in white sauce - Danish cheese, almonds & dried Dab, paired with...

2009 Chardonnay, Cost di Bussia, Langhe

Butter poached cod - Potatoes, onions & beetroot, paired with...

Fantastic: 2009 Chardonnay, Bogle, Clarksburg & Monterey

Mock-turtle soup - veal, king crab & quails egg, paired with...

2008 Six Vineyards Pinot Noir, Lemelson, Willamate Valley

Poussin crispy skin, mushrooms & scorzonera, paired with...

2008 Parole de Berger, Pierre Gaillard, Languedoc

Appetizer selection 3

Heavenly tasty: Danish dream cake - Jerusalem artichoke, sea buckthorn & white chocolate, paired with...

1999 Tokaji Aszú, 6 Puttonyos, Hètszolo

end game...

...

Both Mock-turtle soup and Poussin were not so impressive for me; bit on a heavy end... however complete experience was very good and in the nutshell, elegant food with personality, passion and attention.

Highly recommended.

Tim Ho Wan @ Hong Kong, Michelin 1 Star@10€

I've wait ca. 90 minutes at Tim Ho Wan, just few hours before my flight to Shanghai... and I've been lucky! People ware nervous, agitated... actually quite strange and unceremonious for Chinese...

BUT, the prawn dumplings, pork buns... tasted as haven and it cost less than 10€! If I compare this to other bills I've paid at at other Michelin-starred restaurants... simply I can't believe!

The prawn wrapped in delicate, rice pastry... a food amazingly inspirational and tasty!

Steamed to a perfection.... and yet with some crisp texture... actually completely contra-intuitive; I've checked few time what's in it!

And when the food is fried, well just amazing!

The man behind is Mak Pui Gor, the former dim sum master at three-starred restaurant Lung King Heen at Hong Kong's Four Seasons Hotel. I believe this explains everything!

Don't miss this one! Just take a number and stand in line...

Kabuki Wellington @ Madrid

Kabuki Wellington; one Michelin star restaurant, the space of Ricardo Sanz and probably one of the best place in Spain when it comes to Japanese food.

Behind the enormous bar, Ricardo Sanz...

and his team...

let's start...

This are unmistakable THE signature dishes:

the butterfish with white truffle cream...

otoro served a-la Jamón ibérico and literally melt...

langostino, scallops and the Kobe mini-burger...

Everything was simply exquisite and ideal twist between Mediterranean and Japanese kitchen. The butterfish with white truffle was perfect, the fish fresh, the Kobe mini-burger so tasteful and fun… but otoro was pure joy and in my opinion, as close as possible to gastronomic perfection.

Aright, I admit I've become a sushi snob long before I’ve eat in Kabuki, but Ricardo Sanz definitely served for me a sushi and sashimi that has changed my conception on how sushi can taste; a master of sushi and in combination of the spacious and yet minimalist restaurant... well, it is a kind of magic.

If you up to for a desert, just go for Yofu dessert.

Highly Recommended.

Le Bistrot, Chamonix

Well in my opinion it can’t be better than living in the hotel Le Morgan in Chamonix. Why? Simply because the hotel’s restaurant is run by a young chef, Mickey Bourdillat who got his first Michelin. The only better hotel is probably Albert 1er, and you'll read soon why :-)

Very inventive, creative and... different dishes; with a lot of taste, flavors, support and freshness. The exclusive use of local ingredients for sure gives this restaurant an edge and I'm looking forward for more.

entrance of Le Bistrot...

Savoy bread...

appetizer...

scallops and young spring vegetables - carpaccio style, crunchy vegetables and vegetable emulsion...

lobster and the crab - celery, lobster and crab, shall emulsion...

roasted scampi on a risotto of pasta shells, ham and meat juice...

roasted wild sea perch on the skin, fennel compote, tomatoes and citrus fruits, olive juice...

roasted sweetbread with green asparagus...

cheese board...

chef pastry number one...

chef pastry number two...

coffee at the bar...

at the "fire place"...

Surprisingly good, Le Bistrot is without any doubt a fantastic French restaurants, with a friendly stuff and excellent wine list by the glass. Above menu was served together with a wine menu (5 different wines).

Recommended.
